Cooking the Chicken

Prepare the chicken first and cook it. For this purpose, preheat the oven and also prepare the baking pan by greasing it. The preheating temperature is 375 degrees. Use olive oil for greasing.

Use thyme sprigs, salt, and pepper to season the chicken breasts and put it in the baking pan. Bake for at least half an hour or 25 minutes. Let it cool and shred after cooling. At least three cups of shredded chicken.

Making the Stew Filling

Take a large-sized cooking skillet and put it on the stovetop at medium heat. Melt the butter in the pan and stir fry the leeks in it. Then add the rest of the veggies including the carrots, and celery, and fry up the vegetables.

Add some flour to the mixture after sautéing the vegetables.

Pour the chicken broth and wine into it and also add the cream to the pot. Add the goat cheese and stir the mixture, making sure that everything combines well. Add more seasoning including thyme, salt, and pepper. Let it boil for a few minutes.

Add the shredded chicken into the cooking mixture and also throw in the peas at the same time. Let it simmer for at least 10 more minutes. Wait for the thickening of the stew.

Then pour the cooked stew into the baking dish and cook at 375 degrees. Bake and then put aside for air cooling.
