Ingredients required for buffalo chicken pasta with no cream cheese:

  • Pasta: 16 oz

You can use whichever type you want. Use that one that can keep its shape well under heavy sauces. We’ll refer to penne pasta or bow-tie pasta.

  • Sauce: ¾ cup

We call it Frank’s Red Sauce or Buffalo Sauce. There is no brand advertisement you can use whatever brand you want, but remember to replace it carefully, as we tried this one only.

  • Chicken: 2 breasts

Use boneless chicken along with removed skin. Slice chicken breast into pieces (small enough). Everyone can use their favorite vegetables in replacement.

  • Cheese: 1 cup

Remember we cannot use cream cheese. Cheddar cheese is fine but you can also use garlic and herb flavored. Boursin cheese is available in this flavor.

Buffalo Chicken Pasta No Cream Cheese

  • Fresh garlic/garlic powder: 1 tablespoon
  • Onion/ onion powder: 1 tablespoon
  • Olive oil (chicken sautéing): 2 tablespoon
  • Salt and pepper: according to taste
  • Paprika powder
  • Dressing (Ranch dressing for creamy and tangy balance)

Step # 1: Boil the Pasta

Maybe you already know but still, I’ll tell you to add a pinch of salt and a few drops of olive oil. Drain it with cold water after boiling to avoid clumping. Save the salty water in which you boiled the pasta. We’ll use this water to prepare the sauce.

Step # 2: Cooking of chicken:

Set the heat for cooking chicken from slow to medium flame at the start. Add oil to pan (olive oil). You’ll season chicken with all the spices mentioned above in the ingredients (paprika powder, salt, pepper, onion and garlic powder). Cook chicken till the brown colour appears.

Step # 3: Sauce preparation:

You can prepare a simple, tasty sauce by simply mixing ranch dressing and buffalo sauce.

Alternate method:

Melt butter in a pot or pan at medium flame. Add some paprika and garlic powder, and cook for two minutes. Put flour in it and cook for almost 5 minutes. Keep stirring otherwise, it may burn. Add the water used to boil the pasta that we saved in the 1st step. Again cook till you get the good consistency you need, and add cheese and buffalo sauce too.

Step # 4: Combining all the items:

Take all three items that are chicken, pasta and sauce and pour them into a bowl. Mix them thoroughly, it is better to toss them so that pasta does not damage.

Step # 5: Serving:

Heat the buffalo chicken with no cream cheese for two to three minutes at a low flame after combining all the stuff. This step makes the dish more flavorful. Sprinkle the pasta with some cheese and paprika and serve it and enjoy.

For reheating add a little milk and some cheese while heating on low flame. This will give a fresh taste to your pasta.
